¾ cup sugar
½ cup vegetable shortening
1 cup maple syrup
1 teaspoon vanilla extract
2 eggs
2 cups regular oats
1 cup all-purpose flour
¼ cup flaked sweetened coconut
1 teaspoon baking powder
½ teaspoon salt
Vegetable cooking spray

Cream sugar and shortening at medium speed of a mixer until light and fluffy (about 5 minutes). Add syrup, vanilla, and eggs; beat until well-blended. Combine oats and next 4 ingredients; stir well. Add to creamed mixture, stirring just until dry ingredients are moistened.

Pour batter into a 13 x 9-inch baking pan coated with cooking spray. Bake at 350 for 40 minutes or until a wooden pick inserted in center comes out clean.

Yield: 2 dozen
